No Bake Cookies

Okay, here it is. My first foray into the world of food blogging. Yesterday was my 9th wedding anniversary (where did the time go??) and my hubby’s fave treats are these No Bake Cookies. The recipe is from my mom-in-law. My daughter, Jenna, entered them into the county fair this summer and she won the blue ribbon for them! Yeah, Jenna!
Hope you enjoy them as much as we do…

INGREDIENTS
2 cups sugar
1 stick margarine
3 Tbsp cocoa
½ c milk
½ peanut butter
1 tsp vanilla
3 cups oats ( I suggest the Quick Cooking Oats)

DIRECTIONS
Mix sugar, cocoa, and margarine with milk and boil for one minute, stirring all the time. Remove from heat; add peanut butter, oats, and vanilla flavoring. Have wax paper (or buttered aluminum foil) ready and drop onto paper with teaspoon.

I use a heavy bottomed saucepan rather than a regular saucepan for this recipe. It just seems to work better. I let the cookies set up for at least 30 minutes but you can do longer or shorter depending on how soft or firm you like them.

This recipe makes approximately 30 cookies.

Happy Anniversary, Honey!!

It Has Begun....

I loved the idea of the blogs. I love to read everyone’s blogs…their interests and family news; I’ve even been following blogs of strangers on their vacations, planning their weddings, and their journeys through life.

Now it has come time to set pen to paper (so to speak) and dive right in with my own. It only made sense to join my family and friends and to use my space to share with you my love of cooking and specifically how I am constantly trying to provide my busy family with great food while balancing that with everything else that we have to do in a day. I love new recipes and trying new things and being true to the culinary spirit of great food; however, like many of you, I work full-time and am raising four children AND a husband. I don’t want to fall into the frozen tundra of dinners (although there are must times for that!) Therefore, I am a great supporter of the “Semi-Homemade”, Quick Fix, and especially of the Slow Cooker. I’m always on a mission to find great recipes that the family loves and are able to be easily prepared. I want to share these with you so that you can add these to your family’s table and also enjoy!!

Thanks for coming to share our food life as I look forward to doing with you!
